Ingredients

  • 70g spaghetti (dry) 260 kcal
  • 90g sardines in olive oil, drained 180 kcal
  • 140g fennel bulb 43 kcal

  • 15g lemon juice 5 kcal
  • 2g lemon zest 1 kcal
  • 1g black pepper 3 kcal

Cooking instructions

  1. Bring a pot of salted water to a boil and cook the spaghetti until al dente. Reserve 60 ml pasta water, then drain.
  2. While pasta cooks, heat olive oil in a skillet over medium heat. Add sliced fennel and cook 5-6 minutes until tender.
  3. Stir in sardines, raisins, and pine nuts. Add lemon zest and lemon juice; warm gently 1-2 minutes, breaking up sardines slightly.
  4. Toss in cooked spaghetti with a splash of reserved pasta water to loosen into a glossy sauce.
  5. Season with black pepper and salt as needed (sardines may be salty). Serve hot.
